What is wine?
As we all know, wine is an alcoholic beverage that is usually enjoyed during special occasions, may it be in holidays or social gatherings. What makes it more interesting is how it is made. In the 5 processes of winemaking where we follow the order of these processes: Harvesting, Pressing, Fermentation, Clarification and Bottling & Aging, Fermentation is the essential reason why wine has its special features such as being alcoholic and its firm and rich texture.
What is Fermentation
      According to the dictionary from oxford languages: fermentation is the chemical breakdown of a substance particularly glucose by bacteria, yeasts, or other microorganisms that results in chemical changes of the substance.
 
     In terms of biochemistry, it is a process of extracting energy from carbohydrates without the need for oxygen.
    Before we show you a simple fermentation set up let’s talk about grapes
Grapes
In winemaking, the glucose that is supposedly broken down by microorganisms pertains to grapes or in its scientific name: Vitis but if you are referring to the most common grapes used in winemaking then that is the Cabernet Sauvignon or in its scientific name,  
Vitis vinifera.
The number of haploid chromosome that a           has is 19. But since mitosis requires diploid chromosomes to undergo cell division in the somatic cells, we will multiply n=19 by 2. Therefore, we have 2n=38.

Explanation for 
prophase
Chromosomes are formed and the nuclear envelop breaks down. Meanwhile spindle fibers are created by the centrioles which will attach to the kinetochore of the 38 chromosomes, migrating them towards the center

The chromosomes are now simply aligned in the metaphase plate
anaphase
The spindle fibers proceed to separate the sister chromatids away from each other towards the opposite poles of the cell
 Cytokinesis
The spindle fiber disappears while the nuclear envelop reappears, forming two daughter cells that contains 38 individual chromosomes and will become less condensed.

Since this is a plant organism, the cell plate will further divide the two daughter cells each having the same number of chromosomes with their parent cell

A SIMPLE FERMENTATION 
What do we do about these grapes specifically for a simple fermentation setup?
harvest
For good quality, one can grow their own grapevines then harvest manually but if not then you can get them anywhere as long as they were harvested carefully with no damages and are ripe
PRESSED
Sort and de-stem those perfectly ripen grapes in a 2 gallon container and smash them in a way that there is an abundant juice or “must” filling the whole container.
Must- a freshly pressed grape juice that still contains solids, skins and seed.

 things
you can do!
Add 2 cups of sugar/honey and packets of wine yeast
Add Campden tablets to sterilize, kill bacteria and further develop the growth of yeast in the mixture (Hanson, 2021)
Cover the gallon with a seal
Stir the mixture from time to time for about 3-5 days during the span of fermentation in 1 week-10 days.
Fermentation is working when bubbles are forming or you can use a hydrometer to know when fermentation is working or ending.

breaks down sugar into alcohol and carbon dioxide that is released into the atmosphere, leaving behind a fermented beverage (wine)
